NEW YORK -- With China's baijiu industry no longer booming, distilleries making the centuries-old spirit are looking overseas to boost their profits.
Lumos, which opened in May in New York, is the first bar in the U.S. dedicated entirely to the grain-based liquor. Owners Orson Salicetti and Qifan Li hope that by putting baijiu into a slew of creative cocktails, they can make it as familiar as pisco, a Peruvian brandy, and mescal, a Mexican spirit, both of which have seeped into U.S. cocktail culture in the past few years.
